My goal here is to inform.  I was really struck by how little information there is online about how to simultaneously reduce one’s carbohydrate and sugar intake and one’s dairy intake.  I found tons of information about one or the other, and there is a lot of information around about living gluten free and about vegan substitutes, but this particular combination seems to have fallen through the cracks.  My goal is simply to help others with the trial-and-error process I have undertaken often with success but often not.  Maybe you can avoid some of the uncomfortable failures I have endured. 

I will admit that I am looking for an excuse to spend more time in the kitchen trying out low carb, dairy free recipes and products.  I can’t bear the idea of not being able to eat my favorite foods and I am very happy to say that I have been able to find ways to make most of my favorites even though ordering them in a restaurant is still a challenge. I am also eager to interact with others who may be on the same journey and may have tips to share with me. 

There has been enormous progress over the last several years in the quality of dairy free products and sugar substitutes and that has helped tremendously.  When I was first diagnosed with diabetes nearly all of the sugar substitutes were chemicals.  Now we have several natural non-sugar sweeteners readily available. When I first realized I was lactose intolerant, pretty much the only dairy substitutes I could reliably get were soy based.  Since for me anything but unsweetened soy milk was off limits, that snow-balled into problems with coffee because let’s face it, unsweetened soy milk makes your coffee taste just like freshly brewed cardboard.  But there are many alternate “milks” available now and dairy products with lactose removed are also much more readily available. I imagine there will be even more options as we move forward.  So things are looking up! Although with more choices it can also be a bit daunting to figure out which products are the best for what purpose. Hopefully we can use this blog as a clearinghouse for reviewing and finding the best uses for all of the options. 

I welcome your feedback and your suggestions. I also welcome your questions.  I find that friends have started asking me questions that I never even thought about and I plan to try to do research and periodic posts to answer random questions that come my way.  So please ask away and send any tips that you may have so we can share. 

I am not at this point seeking to earn money from this venture.  I am quite comfortably retired at this point.  If that ever changes, you can be sure that I will fully disclose any compensation I receive and for what.  As a former consumer advocate I take transparency very seriously and I promise that I will never recommend a product that I have not used or that I don’t like. But my plan is not to become a product spokesperson or for this site to become a place for advertising.
